V8 Swap for 1995 F150

Change radiator, engine, mounts, tranny, flywheel/flexplate, EFI harness, computer, rad hoses, emissions equipment, vacuum routing, possibly front springs but unlikely.
If you find yourself a complete donor truck, take anything engine/efi related and it makes the swap that much easier. Also consider vans, as they are often a good source as well.
If you try to do it part by part, you're probably going to go insane.

New motor mounts, new tranny crossmember, new computer with wiring harness (Try to get the one you need with the motor). If it were me, I'd have the 300 rebuilt, because the 351 isn't going to have a whole lot more torque than the six did. Also keep in mind that the 351 is going to suck a lot more gas than the 300 will.
