A lot of this you already know, but doing it this way makes it clear for any viewer.
K70 = F700 diesel (probably badged as F7000)
4 = Caterpillar V200 573 CID V8 diesel,
V = Kentucky Truck Plant
Q77087 = 1973 numerical series
158 = 158" wheelbase
J = Rangoon Red
K703 = F700 diesel, 23,000lbs GVWR
4A8 = Standard cab. Upholstery and maybe seat type are in there, but I don't have that info
D = Clark model 387-V 5 speed direct transmission
EH4 axle codes
EH = Eaton model 17221 2 speed rear axle, 18,500lb capacity, 5.57/7.60 ratios
4 = Ford 7,000lb capacity front axle, without power steering
23000 = 23,000lb GVWR
23 = Memphis District Code
As to the engine, it has a reman sticker on it, which probably works in your favor. The OEM engine was one of the Cat 1100 series engines that Ford bought from Cat. More info and discussion:

This is an 1150 and should be close to what you have in appearance, other than the oil and dirt:
